The clue is within the name, this tea appears snail-like once the leaves have been rolled by hand.
Harvested when growing conditions are at their best – between March and late summer – the fluffy bud and first two fresh leaves are selected to create this truly special tea.
The handpicked leaves are briefly withered before placed in a large hot pan.
Under continuous turning the leaves are slowly warmed up until they are soft and smooth.
To finish, the tea is rolled by hand which gives the snail appearance.
