The harvest includes only the two youngest, smallest and already opened leaves but not the bud. Using only opened leaves gives the tea a deep dark green appearance.
The real secret of Dao Ren Feng is discovered by looking at the processing of the leaves.
They are steamed using the Japanese method to prevent oxidation, resulting in a very evenly rolled and little wiry looking dried leaf.
This tea combines the typical character to Chinese and Japanese green teas. The taste develops finely tart and fresh, with sweet, fruity nuances.

The Qingshan tea garden is part of the Chinese province Hunan.
The sizable estate includes 350 acres approved for organic farming. The garden is set in a mountainous landscape with an altitude of around 750m and is part of a peninsula in the middle of an artificial lake.
Of the 200 families living in the area, 148 are involved in tea production.
