Rooibos is harvested from January and March by pruning the bushes to 35 cm high. The sections are collected for further processing. Mechanically chopping and rolling under moderate pressure, an 8 to 24-hour fermentation is initiated. It is at this stage the tea produces the red colouration of Rooibos and develops a fruity aroma. The moisture content is then reduced to 10% by drying in the sun. Steam then pasteurizes the Rooibos 87 ° C to prevent pest infestation during the subsequent storage period.
Rooibos is still known with the following popular names: Tea Masai, Bushman tea, Rooibos tea, Koopmann Redbos tea.
Nutritionally Rooibos is viewed as an excellent everyday drink, which contributes to strengthening the immune system. This is also an ideal drink for children, pregnant women and nursing mothers.
