The secret of Yin Zhen Silver Needle relates to the processing and manual selection of the un-opened leaf buds. Thirty thousand fresh buds are needed to produce one kilo of finished tea.
The leaf buds are dried in a shaded well-aired space until the original moisture is reduced to 10 – 20%. Afterwards the buds are dried off in drying baskets at around 40C.
The name Yin Zhen Silver Needle refers to the silvery, silk like fluff surrounding the buds – this is our top quality white tea.
For Yin Zhen only the most beautiful, aromatic buds of the Pai Hao tea plant are plucked.
White tea does not become bitter, the leaves can remain in the pot and re-brewed several times. If you prepare Yin Zhen in a glass pot or cup you might see the buds ‘dance’ as they unfurl.
Yin Zhen has a delicate taste. If brewed correctly with about 80C hot water the brew is nearly colour-less.
Recommended preparation: 6g of tea leaves (approx 3 heaped teaspoons) for 0.5l of 80°C hot water
